I don't see why not. It would be recognized under the "JBOD" protocol, e.g.
"just a bunch of disks," by default.
Given that there are some questions about the speedyness of the Via
controller, objective testing MIGHT show that your throughput on the VIA
controller is no faster and maybe slower than it would be on one of the IDE
ATA-100 channels, though.
