Outlook should be able to Calculate out days for you

So is there anyway to calculate out like 120 days on the calander so I don't
have to sit and count it out myself. I work in a Law Office and we live on
calendaring things out like 30 days, 90 days or 120 days. I need to be able
to just put in my start date and enter like 90 days from the start date.

All versions of Outlook can do that. Open an appointment and in the Start box type: 90d, then press Tab.
