Outlook open in 2 windows

Is there a way to get outlook to open in more than one window - I'd like to
be able to switch back and forth on my task bar between contacts, calendar
and inbox.

No but you can open individual folders in their own window by right clicking
the folder and selecting "Open in new window" and if when you close Outlook
you use the File > Exit command the windows "should" re-open the next time
you launch Outlook
