I regularly use my OOO Assistant and indicate in the message when I
expect to return to be in the office. However, I am currently on sick
leave and it has lasted longer than was scheduled. How can I, or the
administrator under my instruction, modify the response text? I would
also like the status to be turned back to "in office" then "out of
office" so that those who email me get the new message.

The administrator should be able to log into your mailbox without any
problem. I do that for people here often, and always when someone leaves the
company so that I establish an Out of Office response for their mailbox for a
period of time. You can do this yourself if you have remote access, if not
then the administrator will be able to do this for you.
