Outlook express sent items box only keeps my last 7-10
days of emails, whereas my inbox has all emails I've
received which is a few hundred over the past year. How
can I get my sent items folder to hold all of my sent
files.

Do not save mail in OE default folders as they will become corrupted.
Create your own folders for this and move the mail to them.

After you move your mail, compact your files manually while working
*offline*.

File>Work Offline (or double click Working Online in the Status Bar).
File>Folder>Compact all folders.

In Tools>Options>Maintenance: Uncheck Compact messages in background
and leave it unchecked.

It does store forever. Therefore it must be something you are doing to delete them. Perhaps message rules?

True and more True!

The True and more True can't be applying to message rules.
Mail rules don't have an age condition or a way to change to Sent Items
folder.
News rules can't be applied to Sent Items.

I would move the messages out of Sent items, close OE, then delete Sent
Items.dbx.

True, meant that all Sent items are stored and there isn't a number limit or
time, if the setting is chosen to do so.
