I delete a contact eg Bill Smith and add a new contact Bill Jones. Now when I
compose a new message and start to type Bill in the 'To' field it auto
completes the old Bill Smith email address even though he no longer exists in
my contact list.
Does anyone know how to remove him from Outlooks memory.

Autocomplete data is stored in a file called the NK2 or autocomplete file.
For more informaiton, including how to edit this file, you can review the
document found at: http://www.dcs-imaging.com/autocompletetips.htm If you
just have one or two records to delete though, just highlight the unwanted
entry when it autocompletes and press the delete button.
