Outlook 2007 event in series category change

How can I change the color (category) of an event that is a recurring
(series) event.
I need to be able to mark these events in series as completed.
Thanks for any help.
 
I know that. That's the problem (although I wasn't very clear with my
question when I re-read it so I apologies).

In outlook 2003 you could change the color of an event even if it was a
series and it was reoccurring. Can you do that in outlook 2007?
 
Outlook 2003 used labels which were changeable for individual items.
Outlook 2007 uses color categories which apply to all in the series.

I also used this feature in Outlook 2003, changing the color of a single
entry in a series after it had been completed. Since Outlook 2007 cannot do
this, can you recommend an alternate way to achieve this type of result?
