When the text doesn't fit in one line, Outlook automatically continues
in the next line.
There is no newline character inserted when that happens, as far as I can
tell. It's a visual convention due to the size of your window. If you were
to widen the window, you'd see the line dynamically rewrapped to fit the
current window size, indicating that the line break you think you see is not
really there. Only if you press Enter will an actual line break be added.
Why do you think there is a newline character? Are you saying that you
don't want Outlook to wrap, but to add a horizontal scroll bar to the bottom
and continue on on the same line? I think that's possible when using Word,
by adjusting the page setup, but I don't think it's possible in the Outlook
editor.
