Outlook 2003 ingores my choice of default email address

As I suspect most of you do, I have my most often used email address set as
the default email address in Outlook (in this case Outlook 2003). For the
past few months it has begun periodically using other of my email addresses
for my outgoing mail--inlcluding one I very seldom use--and the problem seems
to be getting steadily worse.

The results in my corrsespondents either deleting the email unread because
they do not recognize the address, or starts an unwanted "where did you get
this email address, should I change my address book to this one for you,
etc., etc. dialogue. MEGA annoying!!!

Is there any way to make Outlook obey my choice and stop this irritating
behavior?

I should add that it is not a fluke limited to one computer. It happens on
both of mine--one of which is a new computer with a fresh Office 2003 install.

There used to be an issue with this in Outlook 2003 but that got corrected
in either SP1 or SP2. Have you already applied all the latest updates to
Outlook 2003? It's at SP3 level already.
