How do you exclude messages with a specific subject line from even receiving
the out of office reply? Doesn't appear to be an option in the rule setup.

Because you can't. You'd need to do a fake OOF using a regular rule.

Tools>Out of Office Assistant. Put your subject words in the Subject field,
then click Advanced and check the box labeled "Only items that do not match
these conditions".
