Opening Spreadsheets in New Windows

This one has been killing me, because I'm sure there's an
easy way to do this...

When you open a second (or third, fourth, etc..) instance
of Excel, how do you force it to open in a new window so
you can Alt-Tab between them?! I can't stand having
multiple spreadsheets open within the same instance of
Excel.
