"open with" option is not avaiable for some files....

when I right click on some files I see the "Open with" option which let me
select the program I want to use to open that file.

But...

This option is not avalible for some files. I asume it is related to the
file type.

How can I add this option to any file ????

Are you able to provide an example of a file (filename with extension)
that works the way you want and one that does not?
