On time and how much has elapsed: how do I Calculate elapsed time.

How do I calculate elapsed time and display it as a Number H:n:s.
Then a average can be developed for response times.

Dispatched time [12/16/2001 8:14:37 PM] and Arrival Time [12/16/2001 8:17:35
PM]
I need it displayed as 00:03:02 in a Query
