This is what happens to my list when I type "1. " in front of the words:

1.
ombine stock, soy sauce, and sherry in a small bowl, and set aside.

It's supposed to look like this:

1. Combine stock, soy sauce, and sherry in a small bowl, and set aside.

What is happening, and how do I stop it?

If you are saying that existing text is being deleted as you type, then you
have typeover mode activated. Press the Insert key to turn it off.

Ok, so I'm not paying attention to my keyboard & that solved half my problem
(thank you). But I still don't know why it's dropping a whole line after the
number. How do I undo that?

I'm not sure why that would happen. As a first step, you may want to display
nonprinting marks, for example by pressing the ¶ button on the Standard
toolbar (Word 97-2003) or the Home tab (Word 2007). Does that reveal
something strange?

You may also want to check your settings for the numbered list (indentation
in particular).

I finally found the problem in the Tabs. It was set for a 6" tab. I removed
that & it fixed the problem. Thanks!
