When you open up several spreadsheets at once, how do you get them to
appear separately on the task bar (I used to have this sorted, but a HDD
crash forced a reinstall).

Excel-Options => Advanced = > Display => Show all windows in the taskbar

I see no 'Advanced' choice under options (I'm using Excel 2003, if that
helps)?

but you have a tab "Display" in Excel options.
