No contacts?

When I send and receive emails, email addresses are not being stored in my
contacts list. My Husbands computer automatically adds the sender of emails
to his contacts list.

Can I set my Windows Mail up to do the same?

Tools > Options > Send. Put a checkmark on " Automatically put people I
reply to in my contact list."> OK
Meaning, each time you reply to your sender, his/her name will be included
in your contact mailing list.

For sent mail:
Tools - Options - Send
[x] Automatically put people I reply to in my address book

For received mail, just right-click on the recipients email address, Add to
Contacts
