Go to Tools/Options/General
There is a place to choose how many sheets you want to open
in a new workbook.

P.S. I think you are in the wrong thread.
 
On top of CLR's response, you may want to add an icon to your favorite toolbar
that inserts a worksheet.

Tools|Customize|commands tab|Insert category
drag the Worksheet icon to your favorite toolbar.

(I like just one worksheet, too. And I like to add worksheets quickly when I
need them.)
