my email address is sending emails without me

every morning I come in I have no less than 60 system admin. undeliverable
messages of which I have never sent emails. I ran Mcaffee virus scan on my
system and server, to no success.

It's not your machine doing this - it's someone elses that is infected and
has your address somewhere on that machine. There's nothing you can do about
it except delete them. They'll go away eventually when the owner of the
infected machine realises it's infected!
