When choosing multiple files or folders to open at the same time in XP I get
a 'move to' command instead. How can i change this?

Did you Add Copy To/Move To to the Right Click menu?

Like here?

45. Add Copy To/Move To (Right Click)

Or with a manual registry tweak like here?
Add Copy To Move To into the Context Menu

See this about why you shouldn't have done it and how to fix it.

Problem caused by adding Copy To and Move To as context menu entries
