MS Outlook responses transfer to Access database?

My group uses Outlook to send out informative updates for standards to a
larger group of users with a read receipt for verification that they have
opened/read the email. We also are using an access database to track their
knowledge and training in the standards. Is there a way to populate a "date"
field in the Access database automatically from the Read responses in Outlook?

I'm a novice in Access, so any help you can provide/suggest would be
appreciated.

It can be done, but you won't be a novice by the time you've done it!

It's a matter of getting Outlook to update the database every time a
Read response comes in - or else of getting Access to automate Outlook
to look through the folder where the Read responses end up, open and
read each one, and update the database accordingly.

Either way, the Outlook programming is the biggest part of the job. The
best sources I know for programming Outlook are www.outlookcode.com and
www.slipstick.com. if you take a look round there you'll see the sort of
stuff involved - and with luck find a near ready-made solution. Post
back here when you need help with the Access end.
