You turn that feature off in Word options, not Outlook. So close
Outlook, open Word, turn off Reading layout, close Word, and you are all
set to go.

Since you appear to be opening Word attachments, open Word, click
Tools>Options and on the General tab, and uncheck "Allow starting in Reading
Layout".
