How do i know when should i change to mixed or native mode?
All servers all in Windows 2003 server box.
 
If you don't have any downlevel (NT or Win2000) DCs in the domain you can
raise the domain functional level to Windows Server 2003. If all you're DCs
in the forest is Windows Server 2003 you can raise the forest functional
level to Windows Server 2003.

Note that this only affects domain controllers, you can have downlevel
member servers in all functionality levels.
