How do I view metadata for records and fields in an Access database? I want
to know when a particular record or field was added to the database.

That information is not stored, anywhere. Sorry!

You can include such audit trails in a database application - in the
same or a separate table - but your forms or other code must maintain
the information programmatically; Access doesn't do it for you.
