meeting request - not working with different outlook version

A meeting request was sent by a user with Microsoft Outlook 2007 and received
by a user with Microsoft Outlook 2000, but was not able to respond to the
request by accepting, declining etc as the information was not displayed as
usual. It appeared in a text version or something...see sample below

How can we fix this?

Turn off reminders when sending meeting requests and make sure the outlook
2000 system is fully updated.
