whats the right syntax for starting Windows 2000 server
with /3GB switch in boot.ini.

You got it, just /3gb is all that is needed. Here is an example:

multi(0)disk(0)rdisk(0)partition(1)\WINNT="Microsoft Windows 2000 Server"
/fastdetect /3gb
