I would like to know without having to delete the appointment, how do I
simply mark it complete?

I don't think you can since 'complete' is a task state, not an appointment
state (in Outlook)

You could also do what I do as a backup. Write it on your wall calendar and
draw a big X thru it when it's completed.( Forgive me, I just couldn't resist
adding a bit of humor.) :-)
