Leave a copy of messages on server keeps turning off

I have and HP laptop running Vista and Office 2007. I keep going into my
Outlook and changing the Advanced Internet Email Delivery settings to Leave a
copy of email on the server for 4 days. This works for a few days then
suddenly it goes back to the default of "off". Is there a hotfix for this or
some other way to keep this option turned "On"?
 
Do you perhaps have a virus scanner that integrates with Outlook? This could
mess around with your email delivery settings.

Anything special that you do (or not do?) in those 4 days? Like leaving
Outlook open or do not restart your computer?
 
Sometimes the laptop is left on, sometimes shut down each night. It is
running Symantec Endpoint Protection (unmanaged as it is a laptop that comes
and goes between work and home).
