large data sets

I have problems sorting and analyzing larger sets of
data. like 300 x 1000 cells

is excel capable of working with such large sets? is
there any optimal worksheet size?

Excel has a very difficult time working with more than 256 columns.

But if you can limit it to 256, you'll be ok.
