If you mean on the servers, then most servers include security auditing -
Windows NT, 2000, & 2003 certainly do. Ditto for Windows XP on the
workstations.
Network traffic? Install a packet sniffer.
Internet traffic? Install a web content filter, e.g. websense.
Email? Install a email content filter, e.g. Mailsweeper.
