is address book backed up when exporting all folders

When in address book no export/import options are available. Is the address
book "automatically" backed up when all subfolders is checked. Also how can
I "see" what folders are in the pst backup

No is is not backed up. You can't export the the Address Book, but you can
export your Contacts folder. To backup, do not use export, but use the Backup
Utility available at the Office Download site here-

To view the backup, you use File, Open OL Data File in Outlook.
