Inserting Signatures

Before MS 2003, I was able to insert a chosen signature in my email depending
on who I was sending it to. I just clicked on "Insert signature" or "Insert
Item" to choose and insert the signature that I wanted. This option does not
seem to be present in MS 2003. Autotext does not allow me to choose a
pre-made signature. How can I choose a pre-made signature and insert it in
my email (at the time I am writing the email)?
