Insert an "answer" field in a document

I'm creating a questionnaire that I'm going to email to some of my team members. I want to create a space for them to fill in the answer to a question. I've seen a field like this before---the field is grey and expands as the user writes in it. How do I insert this into my document?
 
Use the forms toolbar to insert the field. Once you have it set up the way
you want it you activate the field by clicking the lock button on the
toolbar.

(Or you can go under Tools => Protect Documument => Protect for forms
and assign a password.)

What you are talking about - looking for - is what Word calls an "online
form." Check this in help. For more about online forms, follow the links at
