IMAP local store issue

I was using IMAP to access a server and decided to change service providers.
I set the old provider to forward all e-mails to the new host. But that left
the old account inaccessible. I have copies of the old records (Inbox, sent,
etc) locally, which is adequate, but the system keeps trying to access the
old server (and can’t). The error message (credentials refused) is a
nuisance. How can I get Outlook 2007 to stop trying to link to an obsolete
IMAP mailbox, without losing my local copies of the old messages?

Working offline should allow that. I'm not convinced that all the data will
be available, though.
