Icon vs. "Hyperlink text"

If I want to forward an email that contained a link, when my forward email
appears the icon has been replaced by the text description of the link. Is
there a way I can stop that and just display the icon as the link like it was
when I received it to begin with? How do I change the setting to do that?

Sounds to me that your "mail format is wrong". Check - Options > Mail Format
and check to ensure you are replying as html.
