If someone sends me a hyperlink to a web site in an E-mail I cannot just
click on it to open it. I have to cut and paste it into my address bar. Is
there a setting I can change that will just allow me to click on a blue
underlined hyperlink in the body of an E-mail to open it?

Try this: in IE, click Tools>Internet Options>Programs>Reset Web Settings.
