How to send an invitation with choice of times

We wish to run an internal training session with people opting to
attend one of a number of session times. Is there any easy way of
sending an invite where the respondent nominates which meeting time
they will attend ?

No, Outlook meeting requests aren't designed to offer that kind of
functionality. It would be possible, with some effort, to build an option
into a custom message form.
