How to remove a name from distribution list for one time only

I want to send an announcement to the entire college, but I want to exclude
one person because it is a surprise. Microsoft Outlook will not allow me to
remove the name from the distribution list. I only want to exclude the name
for this one e-mail. There must be a way to do this!

There is a way, if you're using Outlook 2003, but you decided not to mention
your version of Outlook.
