How to Remove a Keyboard Shortcut in Outlook

Is it possible to remove the Alt-S keyboard shortcut, as I often send half
written emails because of it?
 
No. try adding garbage characters that can't resolve to a contact in the cc
field - i.e., asdxcfvgb - to keep from accidentally sending mail.
