How to make English (UK) default spellcheck langauge for 2007 doc

How can I make English (UK) the default spellcheck language - I cahnge
everything as per instructions but it always reeturns to Englis (US)?

What have you changed? Start by setting the Windows regional setting to
English UK.
Turn off the automatic language detection (Review > Set Language)
You can then (if necessary) modify the normal template (normal.dotm) to use
English UK as the default language.
