How to keep the date from automatically changing in Office 2003?

When I bring up old letters the date automatically changes to present date.
What do i need to do tho stop this?
 
I would suggest asking in a newsgroup devoted to the application you are
using. I'm guessing you are doing this in WORD? You have posted your
question to a ACCESS newsgroup. ACCESS is a database application.
 
Because you use the (auto) Date Field in the document (and the Field might
have been copied from a template).

Check Word Help on "Field codes: Date field".

BTW, this newsgroup is for Microsoft Access, a database application.
Suggest you post Word questions in one of the relevant Word newsgroups.
