Is there any way to stop a user from un/hiding, moving, resizing
columns on a split form?

I'd recommend using a Continuous Form rather than a datasheet. Doing so
protects the layout of the form from meddlesome users.
 
I've found that setting the form's Shortcut Menu to 'No' will do it.
