How to create editable places in non-editable document?

Dear All:
I have a text document, which I want to make totally non-editable with the
exception of some places. For instance, in sample Agreement I want to make
the only place where I can type anything is Company's name place. How to do
so?
 
What you want is ultimately impossible - *anything* viewable can be copied
or edited. What may suffice is a document protected for forms, with form
fields to accept the variable data.
