Stop pressing Enter at the end of every line. Let Word wrap the text
naturally. Or press Shift+Enter to get a new line without a new paragraph.
Only as a last resort should it be necessary to disable the AutoCorrect
setting.

The default setting is to capitalizze the beginning of each sentence, not
each line. You are running into a problem because you are incorrectly
pressing the Enter key at the end of each line rather than allowing Word to
work the way it is designed. You end up with text that is very difficult to
edit or copy when you do this.
