No, you can't change the automatic text color; its purpose is to
produce readable text depending on the color of the background. For
example, if you change the Shading of a paragraph (in Format>Borders
and Shading, Shading tab) to black, the automatic text color will be
black.

You need to distinguish between "the color choice named 'automatic'"
and "the default color of text in a new document".

The 'automatic' color choice means that the text (foreground) color
will change so it can be seen against the background color. If the
text is formatted with 'automatic' color and you use the Format >
Borders & Shading dialog to change the background to blue or violet
(dark shades), the text will change to white. If you change the
background again to yellow or green, the text will automatically
switch back to black.

To set the color of the text in new documents permanently to some
other color (not 'automatic'), modify the font of the Normal style in
the Normal.dot template (or in some other template that you use to
create new documents). See
http://www.word.mvps.org/FAQs/Customization/CustomizeNormalTemplate.htm
for instructions.

Correction: Of course I meant to say that if the Shading is set to
black, text color will change to *white* (if it is set to
"Automatic").
