How do you unprotect a document in WORD 07?

Did you activate your copy of Word? Do you have an expired trial version?
 
The protection tools are on the Developer Tab (which is not enabled by
default - Word Options > Popular > Show the developer toolbar).

To Add to Graham's reply the Protect/Unprotect controls are on the Review tab in Word 2007 as well as on the Developer tab.
