how do you retrieve sent emails

I need to retrieve an email sent that will be read on Tuesday, how do I do
this.

this option is only available with exchange server
Open the email
ALT + I
and there is a point
retrieve this mail

Message Recall rarely works anyway - usually doesn't.

Not without Exchange, of course - and testing it will probably just end up
sending the recipient another email saying that "sender would like to recall
message x" which, in my opinion, only makes things look worse.
