How do you edit an employee name assigned to an email account?

WE have an computer assigned as admin. Our old admin asst left our
organization, the new staff member signs in and all email's still go out
under the old asst's name.
How can this be edited??
 
Does he have his own mailbox? Then create a new mail profile with that
mailbox; Control Panel-> Mail-> button Show Profiles...
