How do you display the author/typist of a document?

You can insert an { AUTHOR } or { DOCPROPERTY Typist } field.

For the author, fill in the document properties using File - properties -
on the summary tab type the authors name, click OK. Now choose Insert -
Fields - document properties category - click Author, OK.
For the typist you can use one of the other property fields on the summary
tab. Or make your custom doc property, use the custom tab and add a
property. You can insert it following the same method described, this time
click on DocProperty and select the newly made field in the list.
 
"Typist" is one of the built-in properties on the Custom tab.

Indeed, it can be confusing that *custom* document properties can also
be *built-in*. :-)

The intriguing part is that it is "built-in" but not present in the Insert |
Field | DocProperty list until you have "customized" it by defining its
content.

It seems, then, as if the properties aren't really built-in, but rather
a list of suggested names (of custom properties).

Yes, that's my interpretation. What's even more confusing is that you can't
even create a custom property (either by selecting one from the list or by
typing in the name of a new one) without creating content for it. That is,
the Add button is not enabled until you fill in a Value.
