Just wondering if anyone knows how to stop the message **** SPAM being added
to the subject line of a sent message. I am unfortunately having this added
to my emails which definitely aren't spam just messages sent to fellow work
colleagues.

This is not caused by Outlook. but by a third party anti-spam solution
either installed client or server-side.

Tips of the month:
-FREE tool; QuickMail. Create new Outlook items anywhere from within Windows
-Properly back-up and restore your Outlook data

Open the email and Click Edit > Choose Edit message from the drop-down list >
Select the words you want to get rid of > then cut or press backspace key and
when closing the email say yes to "Save changes". That's it.

I am wondering the same thing as all of a sudden all of my outgoing messages
are being sent to the persons spam folder.

The addition of that to a subject is not caused by Outlook but by the mail
scanner of the recipients mail server or of a 3rd party tool he/she has
installed.

The fact that your messages are being marked as SPAM by the recipient could
be that either the mail server you are using is black listed by the ISP of
the receiver or a configuration error on the recipients side.

Without any details or additional testing, we can only resort to guessing
though.
