How do I stop Outlook from adding extra lines to emails?

I use Outlook 2003 for email which uses Word to prepare the messages. In
Outlook the line spacing is set to single spaced. When I create the message
everything looks fine. Everything is fine in the Sent Items folder when I
review the message after sending it.

When Outlook opens the email I've just created and sent to myself there are
extra lines added. It appears that single spacing is now double spacing.

How can I stop this?

Send your messages in Plain Text instead of HTML format.
